- POLENTA PIZZA BASE
Combine in a saucepan:1 cup polenta, 2,1/2 cups cold water,1/2 cup milk,3/4 teaspoon salt,2 cloves mineced garlic and 1 teblespoon minced rosemary.
Heat until bubbly and thick.Stir in 2 to 3 tablespoons olive oil or butter.Spread polenta 1/2″ thick onto oiled parchment paper on a cookie sheet and chill for 45 minutes.Shape to form edges,Bake at 425 degrees for 20minutes;add toppings and handful of cheese.Bake for 15 minutes.
- ALMOND CRUST
In a bowl,combine 1,1/4 cup blanched almond flour.1/2 cup tapioca flour,1 teaspoon baking soda,1/2 teaspoon sea salt,1 minced garlic clove,2 eggs,1 tablespoon lemon juice and 2 tablespoon olive oil.Mix and form into a ball.Roll out to a 12″ circle,1/2″ thick.Bake at 400 degrees for 15 to 20 minutes.Add cheese and toppings,Bake for 5 minutes.
Mix 2 lbs,ground meat with 2 eggs,2 minced garlic cloves,1/4 teaspoon salt,1/2 teaspoon black pepper,1 tablespoon each dried oregano and dried basil.Mix well,form into 2 balls and then flatten with wet hands into 2 circles,each 1/4″ thick.Bake in a preheated 450 degree oven for 10 minutes until firm when pressed.Top with tomato sauce,peppers,olives,mushrooms and onions.Sprinkle with cheese,and broil 4 to 5 minutes until cheese is melted.
- POTATO FRITTATA CRUST
Mix well:1 dozen beaten eggs,1 diced yellow papper,3 green onions(chopped),2 cups cooked,shredded potatoes,2 tablespoons each minced parsley and basil,1 teaspoon sea salt,1/2 teaspoon pepper,4 cloves minced garlic and 1/4 cup flour.Pour into and oiled 9×13″baking dish and bake at 350 degrees for 30 minutes until set.Top with sauce and cheese of choice.Bake 10minutes,and then cool 10 minutes.

- FRENCH BREAD PIZZA
Slice a loaf of bread in half lengthwise,Layer on pizza sauce or pesto and sprinkle with cheese.Bake 10 to 15 minutes at 400 degrees until cheese is babbly and light brown.

- QUICK PIZZA SAUCE
Mix 3 ounces (1/2 can) tomato paste
1 teaspoon olive oil
1,1/2 teaspoon italian herb blend
1/2 teaspoon salt
1 teaspoon onion powder
1 teaspoon sugar
- GREEN PESTO
Process or blend
1/2 cup olive oil
2 cups fresh basil
1 cup italian parsley
1/2 cup lightly toasted nuts
2 to 4 cloves garlic
1/2 teaspoon salt
- SUNDRIED TOMATO PESTO
1/2 cup sundried tomatoes (soaked,drained and chopped)
2 miced garlic cloves
3 tablespoons basil leaves
1 cup pine nuts or walnuts
1/2 teaspoon salt
2 tablespoons lemon juice
1/2 cup olive oil
- OLIVE TAPENADE
In food processor pulse until minced:
1 cup pitted olives
1 tablespoon capers
2 cloves garlic
2 teaspoon lemon juice and zest
1/4 teaspoon black papper
2 tablespoon roasted red pappers.
2 tablespoon parsley
Scoop into bowl and stir in 2 tablespoons olive oil
- CREAMY CASHEW CHEESE/SAUCE
This rich,creamy non-dairy “cheese” can be added to the crust as a sauce or put on top after baking.
Blend until smooth:
1 & half cups raw cashews (soaked 4 hours and drained)
1 & half cups water
1 teaspoon sea salt
2 teaspoons apple cider vinegar
1 tablespoon tapooca flour
3. SPRINLE ON CHEESE
Try some different cheese,such as smoked mozzarella,feta,manchego,Pecorino or a non-dairy cheese.such as nut”parm”,
Nut parm is a non-dairy sprinkle to use in place of Parmesan.Process until almost powdered.1 & half cups toasted.chopped blanched almonds;1/3 cup nutritional yeast;1 & half teaspoons sea salt; and 1/2 teaspoon dried garlic granules.
4. ADD SOME HERBS
Toss 2 cups shredded greens with 1 tablespoon olive oil,1 teaspoon lemon juice and a couple pinches of salt.Massage lightly,and add to pizza before serving.

1 tablespoon each:marjoarm,garlic granules and rosemary powder

1/2 teaspoon fennel seed
Optional:add 1 tablespoon dried powdered nettle leaf.
- BALSAMIC DRIZZLE Simmer 2 cups balsamic vinegar 40 minutes until it leaves a thick coating on a spoon.Drizzle this zesty sauce over the baked pizza.
- GREMOLATA Sprinkle on before serving:Mix 1 cup chopped parsley.2 teaspoons lemon zest and 2 cloves grated garlic.For a drizzle,add 3 tablespoons olive oil and pinches of salt and pepper.
