Blueberry Meringue Crumble


Imagine the most appealing flavours of a blueberry meringue dessert – fresh tangy fruit, crisp sugary meringue and plenty of vanilla – scented cream. This drink combines all of these in one  delicious milkshake. Iced yogurt is used to provide a slightly lighter note than ice cream, but there’s nothing to stop you using ice cream instead for an even greater indulgence.


1  Put the blueberries and sugar in a blender or food processor with 60ml/4 tbsp water and blend until smooth, scraping the mixture down from the side once or twice, if necessary.

2   Transfer the puree to a small bowl and rinse out the blender or food processor bowl to get rid of any remaining blueberry juice.

3     Put the iced yogurt, milk and lime juice in the blender and process until thoroughly combined. Add half of the crushed meringues and process again until smooth.

4    Carefully pour alternate layers of the milkshake, blueberry syrup and the remaining crushed meringues into tall glasses, finishing with a few chunky pieces of meringues.

 Drizzle any remaining blueberry syrup over the top of the meringues and decorate with a few extra blueberries. Serve immediately.




Cook’s tip 

The easiest way to crush the meringues is to put them in a plastic bag on a work surface and tap them gently with a rolling pin. Stop tapping the meringues as soon as they have crumbled into little bite size pieces otherwise you’ll just be left with tiny crumbs.
